This Fresh Ginger Syrup is so easy to make! It can be used in cocktails, added to smoothies or teas, can be drizzled over ice cream for a very grown up dessert or can just be added to soda water for a refreshing ginger ale.
I peeled the ginger to make this syrup but you can leave the skin on if you would prefer a darker syrup. However, by peeling the ginger, I was able to use the pieces of ginger, once they had been strained from the syrup, in other recipes. They were sweet and chewy but still had a real gingery ‘kick’.

Ingredients
- 250 grams fresh ginger
- 1 litre water (4 cups)
- 400 grams sugar (2 cups)
- 1 squeeze of lemon juice
Instructions
- Peel the ginger and cut into thin slices.
- Place the slices of ginger, water, lemon juice and sugar into a saucepan and heat until it reaches a boil.
- Once the mixture starts to boil reduce the heat to a simmer and simmer for 45 - 60 minutes.
- Remove from the heat and leave to cool. Strain through a sieve (or muslin) into bottles.
- This syrup can be kept refrigerated for 2 - 3 weeks.
- Ginger Ale: Fill the glass with ice. Pour in the syrup till the glass is 1/3 - 1/2 full & top up with soda water or sparkling mineral water. Serve with slice of lemon.
- Alternatively this syrup can be added to smoothies or tea or drizzld over ice cream! Yum!
