I’m really excited about these banana flapjacks! It’s not just because they are healthy. It’s not just because they are sweetened with honey and banana, making them refined sugar free. It’s not even that they’re a great school/work lunchbox treat. It’s because I have made a video tutorial to accompany them 🙂 . You can see it here!

I have spent the whole weekend learning the basics of video editing and have probably put my friendships in jeopardy because of it. My total obsession has meant that I have been ignoring all calls, emails and messages. Sorry Kate! I wonder if a batch of healthy banana flapjacks would make up for being such a bad friend?

So please be gentle with me. This is my very first video and I think it is a case of practice makes perfect. There is room for improvement, a lot of room, but I think I may really enjoy learning this new skill.

To be honest with you I haven’t actually tried one of these flapjacks. Banana is not my cup of tea. My brother, however, loves banana so was my very willing taster for this recipe. He ate two in one sitting and bagged up the rest to take home with him – so I take that as a good result. He even asked for the recipe!

Banana Flapjacks

These honey sweetened banana flapjacks are a healthy alternative to traditional British flapjacks | sugarfreepatisserie.com

  • Total Time: 1h 5m

Ingredients

  • 1 cup Water
  • 3 cups Gluten Free Oats
  • 2 cups Mixed Fruit & Nuts
  • 2 tablespoons Butter
  • 2 tablespoons Peanut Butter (heaped spoonfulls)
  • 2 tablespoons Honey
  • 2 Large Bananas

Instructions

  • Preheat the oven to 320°f/160°c/140°c fan.
  • Place the oats and fruit and nuts in to a bowl and set aside.
  • Place the butter, peanut butter and honey in a microwaveable bowl. Microwave on a medium power for 30 seconds, stir and microwave for a further 30 seconds.
  • Mash 2 large bananas in a bowl.
  • Add the mashed bananas and melted butter and honey to the oats and fruit and nuts. Mix thoroughly until it is combined.
  • Line a 8 inch by 10 inch baking tray with parchment paper. Spoon in mixture and squash down into the corners, smoothing the top.
  • Place in the preheated oven and cook for 55 minutes until golden brown.
  • Remove from oven. Cut into squares whilst still warm and then turn on to a rack to cool.
